Ingredients
  

  • 2 Cups Graham Cracker Crumbs
  • 1/2 Cup Unsalted Butter, Melted
  • 1/4 Cup Granulated Sugar
  • 28 Ounces Sweetened Condensed Milk
  • 1 Cup Key Lime Juice
  • 4 Large Egg Yolks
  • 2 Tablespoons Key Lime Zest
  • 1 Teaspoon Vanilla Extract

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line a 9x13 inch baking pan with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Press the mixture into the bottom of the prepared pan.
  3. Bake the crust for 10 minutes until golden brown. Let it cool slightly.
  4. In a large mixing bowl, whisk together the egg yolks and key lime zest until pale. Gradually whisk in the sweetened condensed milk until smooth.
  5. Pour in the key lime juice and vanilla extract, whisking gently until fully incorporated.
  6. Pour the filling over the pre-baked crust and smooth the top. Bake for 15 to 18 minutes until the edges are set but the center jiggles slightly.
  7. Let the bars cool to room temperature, then refrigerate for at least three hours before slicing.
