Ingredients
  

  • 6 cups fresh watermelon, cubed
  • 2 medium English cucumbers, sliced or cubed
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, thinly sliced
  • 1/4 cup red onion, very thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Sea salt, to taste
  • Black pepper, to taste

Method
 

  1. Cut the watermelon into bite-sized cubes and slice the cucumbers.
  2. Soak the red onion slices in cold water for five minutes, then drain.
  3. In a large mixing bowl, combine watermelon, cucumber, and red onion.
  4. In a small jar, whisk together olive oil and lime juice, then pour over the salad.
  5. Gently toss to coat without breaking the watermelon cubes.
  6. Sprinkle feta cheese and mint leaves on top, season with salt and pepper, and toss gently again.
  7. Chill for about ten minutes before serving.

Notes

Use cold ingredients for the best refreshing effect. Add mint just before serving to keep it vibrant.
