- Cut the watermelon into bite-sized cubes and slice the cucumbers.
- Soak the red onion slices in cold water for five minutes, then drain.
- In a large mixing bowl, combine watermelon, cucumber, and red onion.
- In a small jar, whisk together olive oil and lime juice, then pour over the salad.
- Gently toss to coat without breaking the watermelon cubes.
- Sprinkle feta cheese and mint leaves on top, season with salt and pepper, and toss gently again.
- Chill for about ten minutes before serving.
Notes
Use cold ingredients for the best refreshing effect. Add mint just before serving to keep it vibrant.
