Ingredients
  

  • 2 pounds ground beef (80/20)
  • 2 packets taco seasoning (or 4 tablespoons homemade)
  • 1 large bag tortilla chips (about 13 ounces)
  • 4 cups shredded Mexican cheese blend, divided
  • 2 cups salsa (medium or mild)
  • 1 cup sour cream
  • 1 can black beans, drained (15 ounces)
  • 1 cup corn kernels (frozen or canned)
  • 4-5 stalks green onions, sliced
  • 1/4 cup fresh cilantro, chopped

Method
 

  1. Preheat your oven to 350°F (175°C). Spray a 9x13-inch baking dish with cooking spray.
  2. Brown the ground beef in a large skillet over medium-high heat for about 8-10 minutes. Drain excess fat if needed.
  3. Add taco seasoning to the cooked beef along with 1/2 cup water. Stir well and simmer for 3-4 minutes until the liquid absorbs.
  4. Spread half the tortilla chips across the bottom of your prepared dish. Crush them slightly if they're too large.
  5. Layer half the seasoned beef over the chips. Follow with half the black beans, half the corn, and 1 cup of salsa. Sprinkle 1.5 cups of cheese over everything.
  6. Repeat the layers with remaining chips, beef, beans, corn, another cup of salsa, and 1.5 cups of cheese. Dot spoonfuls of sour cream across the top.
  7. Cover the casserole with aluminum foil. Bake for 20 minutes covered, then remove foil and bake an additional 10-15 minutes until the cheese bubbles and turns golden.
  8. Remove from oven and let rest for 5 minutes. Top with remaining 1 cup of cheese, green onions, and fresh cilantro.

Notes

This casserole is customizable with various ingredients. You can use ground turkey or chicken, add more vegetables, or substitute Greek yogurt for sour cream. Leftovers taste even better the next day.
