Ingredients
  

  • 3 cups uncooked sushi rice or short-grain rice
  • 1/3 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 8 ounces imitation crab or cooked shrimp, chopped
  • 1 large cucumber, thinly sliced or julienned
  • 2 medium avocados, sliced
  • 1 large carrot, shredded or julienned
  • 8 ounces cream cheese, softened (optional)
  • 3-4 sheets nori, cut into strips or crumbled
  • 2 tablespoons sesame seeds, toasted
  • 3-4 stalks green onions, thinly sliced
  • Soy sauce for serving
  • Wasabi for serving (optional)
  • Pickled ginger for serving (optional)

Method
 

  1. Cook the rice according to package directions. Mix rice vinegar, sugar, and salt in a small bowl, microwave for 30 seconds, and stir until dissolved.
  2. Transfer cooked rice to a large bowl and pour the vinegar mixture over it. Gently fold in and let cool to room temperature.
  3. Prepare all fillings: chop imitation crab, slice cucumber and avocado, shred carrot, and slice green onions.
  4. Choose an 8x8 or 9x9 inch baking dish or springform pan and line it with plastic wrap.
  5. Press half the seasoned rice into the bottom of the dish to create a stable foundation.
  6. Spread cream cheese (if using), then add cucumber, carrot, and half the protein. Sprinkle sesame seeds and add torn nori pieces.
  7. Add the remaining rice, pressing firmly again. Top with remaining protein, avocado slices, cucumber, green onions, and sesame seeds.
  8. Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  9. When ready to serve, lift the creation out using the plastic wrap and invert onto a serving platter. Slice with a sharp, wet knife.

Notes

Use short-grain rice for the best texture. Don't skip seasoning the rice for authentic flavor. Prepare avocado last to prevent browning. Serve cold or at room temperature.
