Ingredients
  

  • 8 slices thick-cut brioche or challah
  • 8 ounces full-fat cream cheese, softened
  • 1.5 cups fresh strawberries, hulled and thinly sliced
  • 4 large eggs
  • 1/2 cup whole milk or half-and-half
  • 1 teaspoon pure vanilla extract
  • 1/2 teaspoon ground cinnamo
  • 2 tablespoons maple syrup
  • 2-3 tablespoons unsalted butter

Method
 

  1. In a small mixing bowl, combine the softened cream cheese and two tablespoons of maple syrup until smooth.
  2. Wash and hull the strawberries, then slice them into thin pieces.
  3. Spread the cream cheese mixture on four slices of bread, layer with sliced strawberries, and top with the remaining slices to form sandwiches.
  4. In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon.
  5. Dip each sandwich into the egg mixture for 20-30 seconds per side.
  6. Melt a tablespoon of butter in a skillet over medium-low heat and cook the sandwiches for 3-4 minutes on each side until golden brown.
  7. Serve immediately, cut diagonally, with extra strawberries and maple syrup.

Notes

Use stale bread for better texture. Keep the heat low and slow for even cooking. Pat strawberries dry to avoid a runny filling.
