Ingredients
  

  • 2 cups fresh strawberries, hulled and sliced
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup Greek yogurt, full fat
  • 1/2 cup heavy cream, cold
  • 1/3 cup honey or maple syrup, adjust for sweetness
  • 1 teaspoon vanilla extract, pure
  • 4 full sheets graham crackers, crushed into fine crumbs
  • 1 tablespoon melted butter

Method
 

  1. Prepare the strawberry swirl by cooking sliced strawberries and honey in a saucepan over medium heat for 5-7 minutes until softened. Mash into a thick jam and let cool.
  2. Create the cheesecake base by beating softened cream cheese until smooth, then mixing in Greek yogurt, remaining honey, and vanilla extract. Whip heavy cream until soft peaks form and fold into the cream cheese mixture.
  3. Assemble the popsicles by layering cheesecake mixture and strawberry jam in molds, swirling them together. Leave space for the crust layer.
  4. Mix crushed graham crackers with melted butter and press onto the top of each mold. Insert popsicle sticks and freeze for at least 6 hours.

Notes

Use room-temperature cream cheese for a smooth texture. Tap molds on the counter to remove air bubbles. Run molds under warm water to release popsicles.
