Ingredients
  

  • 3 cups corn (frozen, canned, or fresh)
  • 8 oz cream cheese (softened)
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 2 medium jalapeños (finely diced)
  • 1 cup Pepper Jack cheese (shredded)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 teaspoon chili powder
  • 1/4 cup fresh cilantro (chopped)
  • 1 tablespoon lime juice

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, beat the softened cream cheese until smooth.
  3. Stir in the sour cream and mayonnaise until well combined.
  4. Fold in the corn, diced jalapeños, and half of the shredded cheeses.
  5. Add the chili powder and lime juice, stirring until evenly distributed.
  6. Transfer the mixture to a greased baking dish and smooth the top.
  7. Sprinkle the remaining cheeses over the surface.
  8. Bake for 20 to 25 minutes until the cheese is bubbling and golden brown.
  9. Let it sit for 5 minutes before garnishing with fresh cilantro.

Notes

Use fresh ingredients for the best flavor. You can substitute ingredients based on availability, such as using Greek yogurt instead of sour cream for a lighter version.
