Method
- Butter one side of each slice of sourdough bread generously.
- In a bowl, crack the eggs, add salt, pepper, and milk if desired, and whisk until combined.
- Heat a non-stick skillet over medium-low heat and place the bread slices butter-side down.
- Toast the bread until golden brown, then flip and add cheese to one slice.
- Move the bread to the side of the skillet and add butter to the empty space.
- Pour the egg mixture into the pan and gently push the eggs toward the center as they set.
- Once the eggs are cooked to your liking, fold them into a square shape and place them on the cheese-covered slice of bread.
- Top with the second slice of bread, press gently, and cook for another 30 seconds.
- Remove from the pan, slice in half, and serve immediately.
Notes
Ensure the pan is not too hot to avoid burning the bread. Use room-temperature eggs for even cooking. For a crispy sandwich, toast the bread well.
