Ingredients
  

  • 2 thick slices of sourdough bread
  • 2 large eggs
  • 1-2 slices of sharp cheddar cheese
  • 1 tablespoon of unsalted butter
  • Sea salt to taste
  • Black pepper to taste
  • 1 teaspoon of whole milk or cream (optional)

Method
 

  1. Butter one side of each slice of sourdough bread generously.
  2. In a bowl, crack the eggs, add salt, pepper, and milk if desired, and whisk until combined.
  3. Heat a non-stick skillet over medium-low heat and place the bread slices butter-side down.
  4. Toast the bread until golden brown, then flip and add cheese to one slice.
  5. Move the bread to the side of the skillet and add butter to the empty space.
  6. Pour the egg mixture into the pan and gently push the eggs toward the center as they set.
  7. Once the eggs are cooked to your liking, fold them into a square shape and place them on the cheese-covered slice of bread.
  8. Top with the second slice of bread, press gently, and cook for another 30 seconds.
  9. Remove from the pan, slice in half, and serve immediately.

Notes

Ensure the pan is not too hot to avoid burning the bread. Use room-temperature eggs for even cooking. For a crispy sandwich, toast the bread well.
