Method
- Preheat your oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Then, add minced garlic and cook for another minute.
- Add ground meat to the skillet. Break it apart with a wooden spoon. Cook until browned completely, approximately 8-10 minutes. Drain excess fat if necessary.
- Season the meat with cumin, chili powder, salt, and pepper. Stir well to combine.
- Warm the tortillas slightly to make them pliable.
- Spread about 2 tablespoons of refried beans on each tortilla. Then, add a portion of seasoned meat, rice, and 1/4 cup of shredded cheese.
- Fold the sides of the tortilla inward, then roll tightly from bottom to top. Place seam-side down in the prepared baking dish. Repeat with remaining tortillas.
- Pour enchilada sauce evenly over all the burritos.
- Sprinkle the remaining cheese generously over the sauce-covered burritos.
- Bake uncovered for 25-30 minutes until the cheese melts and bubbles beautifully.
- Remove from oven and let rest for 5 minutes before serving.
Notes
Don't overfill your tortillas to prevent bursting. Use homemade enchilada sauce for better flavor. Let the burritos rest before serving to absorb excess moisture.
