Ingredients
  

  • 8 large flour tortillas
  • 2 pounds ground beef or turkey
  • 1 can (16 oz) refried beans
  • 2 cups cooked rice
  • 3 cups shredded cheese (Mexican blend), divided
  • 3 cups enchilada sauce
  • 1 medium diced onio
  • 3 cloves minced garlic
  • 2 teaspoons cumi
  • 1 tablespoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 375°F. Spray a 9x13-inch baking dish with cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 5 minutes. Then, add minced garlic and cook for another minute.
  3. Add ground meat to the skillet. Break it apart with a wooden spoon. Cook until browned completely, approximately 8-10 minutes. Drain excess fat if necessary.
  4. Season the meat with cumin, chili powder, salt, and pepper. Stir well to combine.
  5. Warm the tortillas slightly to make them pliable.
  6. Spread about 2 tablespoons of refried beans on each tortilla. Then, add a portion of seasoned meat, rice, and 1/4 cup of shredded cheese.
  7. Fold the sides of the tortilla inward, then roll tightly from bottom to top. Place seam-side down in the prepared baking dish. Repeat with remaining tortillas.
  8. Pour enchilada sauce evenly over all the burritos.
  9. Sprinkle the remaining cheese generously over the sauce-covered burritos.
  10. Bake uncovered for 25-30 minutes until the cheese melts and bubbles beautifully.
  11. Remove from oven and let rest for 5 minutes before serving.

Notes

Don't overfill your tortillas to prevent bursting. Use homemade enchilada sauce for better flavor. Let the burritos rest before serving to absorb excess moisture.
