  • 4 cloves garlic, minced

  • 1 teaspoon smoked paprika

  • 28 ounces canned diced tomatoes
  • 6 large eggs
  • 1/2 cup fresh parsley, roughly chopped
  • 1/2 cup fresh cilantro, roughly chopped
  • 2 tablespoons fresh mint, optional
  • Salt and pepper to taste
  • 1/4 cup feta cheese, crumbled

Method
 

  1. Step 1: Sauté the Aromatics - Heat olive oil in a large skillet over medium heat. Add diced onions and red bell peppers, sauté for 5-7 minutes until soft.
  2. Step 2: Add Garlic and Spices - Stir in minced garlic, ground cumin, smoked paprika, and red pepper flakes. Cook for 1 minute until fragrant.
  3. Step 3: Simmer the Tomato Sauce - Add canned tomatoes with juices, season with salt and pepper, and simmer for 10-15 minutes until thickened.
  4. Step 4: Create Wells and Add Eggs - Make six wells in the sauce and crack an egg into each well.
  5. Step 5: Poach the Eggs - Cover and cook for 5-8 minutes until egg whites are set but yolks are runny.
  6. Step 6: The Final Flourish - Remove from heat, sprinkle with fresh herbs and crumbled feta, and serve immediately.
