Method
- Pat chicken dry and cut into 1-inch pieces. Season with salt and pepper.
- Whisk together soy sauce, honey, rice vinegar, ginger, garlic, and sesame oil in a bowl. Reserve 1/4 cup for later.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes until browned and cooked through. Remove from skillet.
- Reduce heat to medium, add remaining sauce to skillet and bring to a simmer. Mix cornstarch with water and add to sauce, whisking until thickened.
- Return chicken to skillet, toss to coat in sauce, and heat through.
- Serve over rice, garnished with broccoli, green onions, and sesame seeds.
Notes
Marinate chicken for more flavor if time allows. Use fresh ginger and garlic for best results.
