Ingredients
  

  • 2 cups raw almonds, unsalted
  • 1 cup Medjool dates, pitted
  • 1 cup fresh or frozen raspberries, thawed
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ¼ teaspoon sea salt
  • ¼ cup unsweetened shredded coconut (optional)

Method
 

  1. Add the raw almonds to a food processor and pulse about 10-12 times until roughly chopped.
  2. Add the pitted dates and process for about 30 seconds until the mixture starts to clump together.
  3. Add the raspberries, vanilla extract, almond extract, and sea salt, and process for another 30-45 seconds until a sticky dough forms.
  4. Test the mixture by pressing a small amount between your fingers; it should stick together easily.
  5. Scoop out about one tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
  6. If desired, roll each bite in shredded coconut or other toppings and place on a parchment-lined plate.

Notes

Use fresh, plump Medjool dates for the best texture. Soak dry dates in warm water for 10 minutes before using. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
