Ingredients
  

  • 2½ cups all-purpose flour
  • 2 cups granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1½ cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 2-3 tablespoons purple food coloring
  • 2 teaspoons vanilla extract
  • 1 tablespoon white vinegar
  • 16 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • ¼ teaspoon salt

Method
 

  1. Preheat your oven to 350°F and grease and flour two 9-inch round cake pans.
  2. Combine all dry ingredients in a large mixing bowl and sift together.
  3. In a separate bowl, whisk together the wet ingredients until smooth.
  4. Gradually pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes.
  6. Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks.
  7. Prepare the cream cheese frosting by beating the softened cream cheese and butter until fluffy, then gradually add powdered sugar and mix in vanilla and salt.
  8. Once cooled, frost the first layer of cake, add the second layer, and frost the top and sides completely.
