Pepperoni Pizza Grilled Cheese

Ingredients
  

  • 4 slices of bread (sourdough, Italian, or white)
  • 1 cup shredded mozzarella cheese
  • 16-20 slices of pepperoni
  • 2 tablespoons softened butter
  • 4 tablespoons pizza sauce or marinara
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon Italian seasoning

Method
 

  1. Heat a large skillet or griddle over medium heat.
  2. Butter one side of each bread slice generously.
  3. Place two bread slices butter-side down in the skillet.
  4. Spread one tablespoon of pizza sauce on each slice in the pan.
  5. Layer about 1/4 cup of shredded mozzarella on each slice, then add 8-10 pepperoni slices per sandwich.
  6. Top with another 1/4 cup of mozzarella.
  7. Spread the remaining pizza sauce on the unbuttered side of the remaining bread slices, then place them sauce-side down on top of the cheese and pepperoni.
  8. Cook for 3-4 minutes until the bottom turns golden brown and crispy.
  9. Carefully flip using a wide spatula and cook another 3-4 minutes until the second side is golden.
  10. Remove from heat and let the sandwich rest for one minute before slicing.

Notes

Use freshly shredded mozzarella for optimal melting. Pre-crisp pepperoni for added flavor. Let the sandwich rest before slicing to prevent cheese from oozing out.
