Ingredients

  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 2 tablespoons natural peanut butter
  • 1-2 tablespoons maple syrup or honey
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon pinch of salt

Method

  1. In a medium bowl or jar, whisk together the milk and peanut butter until completely smooth.
  2. Add the maple syrup, vanilla extract, and salt to the peanut butter mixture and whisk until combined.
  3. Pour in the chia seeds and stir thoroughly to distribute evenly.
  4. Let the mixture sit for five minutes at room temperature, then stir again vigorously.
  5. Cover your container and refrigerate for at least four hours, preferably overnight.
  6. Before serving, stir the pudding once more and adjust the consistency with milk if necessary.

Notes

The quality of your peanut butter matters significantly. Use natural peanut butter with just peanuts and salt. For milk, almond milk creates a lighter pudding, while oat milk makes it creamier. Adjust sweetness to taste.
