  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 tablespoons baking powder
  • 1/2 teaspoon salt
  • 1 3/4 cups milk
  • 2 large eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 2 cups favorite cereal
  • 1/2 cup powdered sugar

Method
 

  1. Preheat your oven to 375°F. Grease a 12-cup muffin tin generously.
  2. Combine flour, sugar, baking powder, and salt in a large bowl. Whisk together thoroughly.
  3. Create a well in the center of dry ingredients. Pour in milk, eggs, melted butter, and vanilla. Whisk until just combined.
  4. Fill each muffin cup about two-thirds full.
  5. Bake for 15-18 minutes until golden and a toothpick comes out clean. Let cool in the pan for 5 minutes.
  6. Prepare the glaze by mixing powdered sugar with 2-3 tablespoons milk until smooth.
  7. Remove muffins from the tin. Dip the tops into the glaze while still warm and sprinkle with cereal.
  8. Let the muffins set for 10 minutes before serving.
