Ingredients
  

  • 2 boxes (about 24 crackers) of graham crackers
  • 4-5 large fresh oranges
  • 3 cups heavy whipping cream
  • 8 oz (1 package) cream cheese, softened
  • 1 cup powdered sugar, sifted
  • 2 teaspoons vanilla extract
  • 3 tablespoons orange zest
  • 1/4 cup orange juice concentrate, thawed
  • Pinch of salt

Method
 

  1. Prepare a 9x13 inch baking dish by lining it with parchment paper.
  2. Beat the softened cream cheese with powdered sugar until smooth and fluffy.
  3. Add vanilla extract, orange zest, and orange juice concentrate to the cream cheese mixture and beat until combined.
  4. In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture in three additions.
  6. Spread a thin layer of the cream mixture on the bottom of the prepared pan.
  7. Arrange a layer of graham crackers over the cream, breaking pieces as needed.
  8. Spread another layer of cream mixture over the crackers and repeat the layering process until all ingredients are used.
  9. End with a cream layer on top, cover tightly with plastic wrap, and freeze for at least 6 hours.
  10. Let sit at room temperature for 5-10 minutes before slicing.

Notes

Use fresh, fragrant oranges for the best results. Chill mixing bowl and beaters before whipping cream for better volume. Allow the cake to sit at room temperature before slicing for easier cutting.
