  • 2 tablespoons Olive Oil
  • 1 medium Yellow Onion, diced
  • 4 cloves Garlic, minced
  • 28 ounces Canned Crushed Tomatoes
  • 4 cups Vegetable Broth
  • 24 ounces Potato Gnocchi (shelf-stable)
  • 1/2 cup Heavy Cream
  • 5 ounces Fresh Spinach
  • 1/2 cup Parmesan Cheese, grated
  • 1/4 cup Fresh Basil, chopped
  • 1 teaspoon Salt, or to taste
  • 1/2 teaspoon Black Pepper, or to taste
  • 1/4 teaspoon Red Pepper Flakes (optional)

Method
 

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 5-7 minutes until soft.
  2. Stir in the minced garlic and red pepper flakes, cooking for another minute until fragrant.
  3. Pour in the crushed tomatoes and vegetable broth, stirring well. Bring to a gentle simmer.
  4. Add the gnocchi to the simmering sauce, cover, and cook for 8-10 minutes until tender.
  5. Stir in the heavy cream and grated Parmesan until melted and the sauce thickens.
  6. Add the fresh spinach and stir until wilted, then mix in the chopped basil. Season with salt and pepper to taste.
  7. Serve immediately, garnished with extra Parmesan and basil.
