- Preheat your oven to 375°F. Grease a 9x13-inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat.
- Stir taco seasoning into the cooked beef. Add black beans, corn, and diced green chiles. Cook for 3-4 minutes until heated through. Remove from heat.
- In a separate bowl, combine salsa and sour cream. Mix until smooth.
- Spread 1/2 cup of the salsa mixture on the bottom of the baking dish. Arrange 3-4 tortillas over the sauce, overlapping slightly.
- Spread one-third of the meat mixture over the tortillas. Drizzle with 1/2 cup salsa mixture, then sprinkle with 1 cup of cheese. Repeat these layers two more times.
- For the final layer, place remaining tortillas on top. Spread remaining salsa mixture over them, then cover with remaining cheese.
- Cover the dish tightly with aluminum foil. Bake for 25 minutes. Remove the foil and bake an additional 15-20 minutes until the cheese bubbles and turns golden brown.
- Let the lasagna rest for 10 minutes before slicing.
Notes
Letting the lasagna rest prevents it from falling apart when cut. Warm tortillas to make them pliable. Drain ingredients well to avoid sogginess. Use quality cheese for better melting. Customize toppings for added freshness.
