Method
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, combine cherry tomatoes, bell pepper, Kalamata olives, and red onion.
- Add parsley, dill, garlic, lemon zest, oregano, 2 tablespoons of olive oil, salt, and black pepper to the vegetables and toss gently.
- Pat the salmon fillets dry and place them skin-side down on the prepared baking sheet. Drizzle with the remaining olive oil.
- Spoon the vegetable mixture evenly over and around the salmon fillets.
- Bake for 12-18 minutes, until the salmon flakes easily with a fork and reaches an internal temperature of 145°F (63°C).
- Remove from the oven and squeeze fresh lemon juice over the dish. Garnish with extra parsley or dill and feta cheese if desired. Serve immediately.
