Ingredients
  

  • 3 large ripe mangoes, diced (about 3 cups)
  • 1-2 jalapeño peppers, finely diced (seeds removed for less heat)
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Method
 

  1. Prepare the mangoes: Peel and dice the mango into small cubes, then place in a mixing bowl.
  2. Dice the vegetables: Finely dice the jalapeño, red bell pepper, and red onion, adding them to the bowl.
  3. Chop the cilantro: Wash and chop the cilantro, then add it to the bowl.
  4. Combine & season: Pour lime juice over the ingredients, then sprinkle with salt and black pepper.
  5. Mix thoroughly: Gently toss all ingredients until well combined.
  6. Taste and adjust: Taste the salsa and adjust seasoning as needed.
  7. Chill (optional): Cover and refrigerate for at least 30 minutes to meld flavors.

Notes

For best flavor, use fresh ingredients and allow the salsa to chill before serving.
