Ingredients
  

  • 1 pound ground beef or lamb
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons fresh lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh dill, chopped
  • 3 garlic cloves, minced
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Method
 

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Combine all ingredients in a large mixing bowl and mix gently with your hands until just combined.
  3. Form the mixture into meatballs, about two tablespoons each, and place them on the prepared baking sheet.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat and sear the meatballs for about 2 minutes per side until golden brown.
  5. Transfer the skillet to the preheated oven or place the meatballs on the baking sheet and bake for 12-15 minutes until the internal temperature reaches 165°F.
  6. Let them rest for 5 minutes before serving.

Notes

Don't skip the lemon zest; it adds essential flavor. Wet your hands slightly before rolling meatballs to prevent sticking. Use quality feta cheese for the best taste.
