  • 1 cup water (for syrup)
  • 2 tablespoons dried culinary lavender
  • 1 cup freshly squeezed lemon juice
  • 4 to 6 cups sparkling water or club soda
  • Ice cubes as needed
  • Fresh mint or lemon slices for garnish (optional)

Method

  1. Prepare the Lavender Syrup: Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar dissolves.
  2. Infuse the Flavor: Add the dried culinary lavender to the syrup, remove from heat, and let steep for 20 to 30 minutes.
  3. Strain the Syrup: Strain the syrup through a fine-mesh strainer into a glass jar or bowl to remove the lavender buds.
  4. Juice the Lemons: Squeeze fresh lemons and strain the juice to remove seeds and pulp.
  5. Combine the Bases: In a large pitcher, mix the cooled lavender syrup and fresh lemon juice.
  6. Assemble the Spritzer: Fill glasses with ice, pour 2 to 3 ounces of the lavender-lemon concentrate into each glass.
  7. Add the Bubbles: Top each glass with sparkling water or club soda and stir gently.
  8. Garnish and Serve: Garnish with a slice of lemon and a sprig of mint or lavender buds, and serve immediately.
