Ingredients
  

  • 4 packages instant ramen noodles
  • 1 pound ground beef
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1-2 teaspoons gochugaru (Korean chili flakes)
  • 1 tablespoon brown sugar
  • 4 stalks green onions, sliced
  • 2 cups spinach or bok choy
  • 4 large eggs
  • Sesame seeds for garnish

Method
 

  1. Bring a large pot of water to boil for the eggs and noodles.
  2. Heat a large skillet over medium-high heat and add the ground beef, breaking it into small pieces.
  3. Cook the beef until browned, about 5-6 minutes, and drain excess fat if necessary.
  4. Add minced garlic and grated ginger to the skillet and stir for about 30 seconds until fragrant.
  5. Add soy sauce, sesame oil, gochugaru, and brown sugar to the skillet, stirring to coat the beef.
  6. While the beef cooks, lower eggs into the boiling water and cook for exactly 6 minutes.
  7. Transfer eggs to an ice bath to stop cooking.
  8. Add ramen noodles to the boiling water and cook according to package directions, adding spinach or bok choy in the last minute.
  9. Drain noodles and greens, then divide among four bowls.
  10. Top each bowl with the seasoned beef mixture and a soft-boiled egg, sliced in half.
  11. Garnish with sliced green onions and sesame seeds, and drizzle with more sesame oil if desired.

Notes

Don't overcook the beef. Prepare all ingredients before starting to cook. Use fresh garlic and ginger for better flavor. Save one ramen seasoning packet to enhance flavor. Store leftovers separately for best results.
