  • 1 cup all-purpose flour
  • ¾ cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup whole milk
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
  • ¾ cup packed brown sugar
  • ¼ cup cocoa powder (for topping)
  • 1¾ cups boiling water

Method
 

  1. Preheat your oven to 350°F (175°C) and lightly grease an 8-inch or 9-inch square baking dish.
  2. In a medium bowl, whisk together flour, granulated sugar, 2 tablespoons cocoa powder, baking powder, and salt.
  3. Create a well in the center and pour in milk, vegetable oil, and vanilla extract. Stir until just combined.
  4. Spread the batter evenly in the prepared baking dish.
  5. In a small bowl, mix brown sugar with the remaining ¼ cup cocoa powder and sprinkle it over the batter.
  6. Carefully pour the boiling water over the entire mixture without stirring.
  7. Bake for 35-40 minutes until the top is set and slightly cracked.
  8. Allow to cool for 10-15 minutes before serving.

Use boiling water for best results. Serve warm with vanilla ice cream or whipped cream for an extra treat.
