Ingredients
  

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1/2 cup sriracha sauce
  • 1/4 cup honey
  • 1/4 cup low sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated (optional)
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 10-12 wooden or metal skewers

Method
 

  1. Cut the chicken into uniform 1-inch cubes.
  2. In a medium bowl, combine sriracha sauce, honey, soy sauce, minced garlic, grated ginger, lime juice, and sesame oil. Whisk until well combined.
  3. Add the cubed chicken to the marinade, ensuring every piece is coated. Cover and refrigerate for at least 30 minutes.
  4. Thread the marinated chicken onto skewers, leaving space between pieces.
  5. Preheat the grill to medium-high heat or the oven to 400°F (200°C).
  6. Grill the skewers for 10-15 minutes, turning occasionally, until cooked through. If baking, arrange on a baking sheet and bake for 15-20 minutes, flipping halfway.
  7. Let the skewers rest for 5 minutes before serving. Garnish with sesame seeds and chopped green onions.

Notes

Ensure chicken is cut into even pieces for uniform cooking. Soak wooden skewers in water for 30 minutes to prevent burning. Reserve some marinade for basting during cooking.
