- Pat the pork tenderloin dry with paper towels and season generously with salt and black pepper.
- In a medium bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, and sesame oil.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the pork tenderloins for 2-3 minutes per side until browned.
- Pour half of the honey garlic sauce over the seared pork and transfer the skillet to a preheated oven. Bake for 15-20 minutes until the internal temperature reaches 140-145°F.
- Remove from the oven and let the pork rest for 5-10 minutes, tented with foil.
- While resting, thicken the remaining sauce by whisking cornstarch and water into the pan juices over medium heat until desired consistency.
- Slice the pork into thick medallions, drizzle with the thickened sauce, and garnish with sesame seeds and green onions if desired.
