Method
- Preheat your oven to 375°F. Generously spray a 12-cup muffin tin with non-stick cooking spray.
- Combine breadcrumbs and milk in a large bowl. Let this mixture sit for five minutes.
- Add ground beef, eggs, diced onion, minced garlic, Worcestershire sauce, salt, and pepper to the bowl. Mix gently until just combined.
- Divide the meat mixture evenly among the 12 muffin cups, filling each cup about three-quarters full.
- Prepare the glaze by whisking together brown sugar, ketchup, apple cider vinegar, and mustard in a small bowl until smooth.
- Spoon about one tablespoon of glaze over each meatloaf cupcake.
- Bake for 20 minutes. Remove from oven and brush with remaining glaze. Return to oven for another 5-7 minutes until the internal temperature reaches 160°F.
- Let the cupcakes rest in the pan for five minutes before removing.
Notes
Ensure to use 85/15 ground beef for moisture. Dice onions finely for even texture. Use a meat thermometer to check doneness at 160°F.
