  • 1 pound lean ground turkey
  • 1 tablespoon olive oil (or sesame oil)
  • 1/2 cup yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 (8-ounce) can water chestnuts, drained and diced
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha (optional)
  • 1 large head butter lettuce or Bibb lettuce, leaves separated
  • 2 green onions, sliced for garnish
  • 1 teaspoon sesame seeds, for garnish

Method
 

  1. Prepare your ingredients: First, finely dice your onion, mince the garlic, grate the ginger, and drain and dice the water chestnuts. Separate the lettuce leaves gently, washing and drying them thoroughly.
  2. Cook the turkey: Heat the olive or sesame oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until it is browned and cooked through, about 5-7 minutes. Drain any excess fat.
  3. Sauté aromatics: Next, add the diced onion to the skillet with the cooked turkey. Sauté for 3-4 minutes until softened. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Add crunch and sauce: Incorporate the diced water chestnuts into the turkey mixture. In a small bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and Sriracha (if using). Pour the sauce over the turkey mixture in the skillet.
  5. Simmer and combine: Stir everything well to combine, ensuring the turkey is fully coated with the delicious sauce. Let the mixture simmer for 2-3 minutes, allowing the flavors to meld and the sauce to slightly thicken.
  6. Assemble your wraps: Finally, spoon the warm ground turkey filling into individual lettuce cups. Garnish with sliced green onions and a sprinkle of sesame seeds. Serve immediately and enjoy your ground turkey lettuce wraps!
