  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Wash the zucchini thoroughly and trim off both ends. Slice the zucchini lengthwise into 1/4-inch thick planks.
  2. In a large bowl, drizzle the olive oil over the zucchini. Add garlic powder, dried oregano, salt, and black pepper. Zest half of the lemon over the zucchini and toss gently until evenly coated.
  3. Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled.
  4. Arrange the zucchini slices in a single layer on the grill. Grill for 2-4 minutes per side until tender-crisp with grill marks.
