Ingredients
Method
- Drain the halloumi cheese and pat it dry with paper towels. Cut the halloumi into 1-inch cubes. Prepare all vegetables, cutting them into uniform 1-inch pieces.
- In a large bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper to make the marinade.
- Add the cubed halloumi and chopped vegetables to the marinade. Toss gently to coat and let sit for at least 15 minutes.
- Preheat the grill to medium-high heat (375-400°F) and lightly oil the grates.
- Thread halloumi cubes and vegetables alternately onto the skewers, creating a visually appealing pattern.
- Grill the skewers for 3-4 minutes per side, turning occasionally, until halloumi is golden brown and vegetables are tender-crisp, about 12-15 minutes total.
- Remove from the grill and serve hot, optionally with fresh lemon juice or herbs.
Notes
Ensure uniform cuts for even cooking. Don't over-marinate halloumi. Preheat and oil the grill thoroughly to prevent sticking. Monitor cooking closely for best results.
