Ingredients
  

  • 2 (8 ounce) blocks Halloumi cheese
  • 2-3 Bell peppers (red, yellow, orange), cut into 1-inch pieces
  • 1 small Red onion, cut into 1-inch pieces
  • 1 cup Cherry tomatoes
  • 1 small Zucchini or summer squash, sliced into 1/2-inch rounds
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Garlic powder
  • 1/4 teaspoon Salt (or to taste)
  • 1/4 teaspoon Black pepper (or to taste)
  • 8-10 Wooden or metal skewers

Method
 

  1. Drain the halloumi cheese and pat it dry with paper towels. Cut the halloumi into 1-inch cubes. Prepare all vegetables, cutting them into uniform 1-inch pieces.
  2. In a large bowl, whisk together olive oil, lemon juice, dried oregano, garlic powder, salt, and black pepper to make the marinade.
  3. Add the cubed halloumi and chopped vegetables to the marinade. Toss gently to coat and let sit for at least 15 minutes.
  4. Preheat the grill to medium-high heat (375-400°F) and lightly oil the grates.
  5. Thread halloumi cubes and vegetables alternately onto the skewers, creating a visually appealing pattern.
  6. Grill the skewers for 3-4 minutes per side, turning occasionally, until halloumi is golden brown and vegetables are tender-crisp, about 12-15 minutes total.
  7. Remove from the grill and serve hot, optionally with fresh lemon juice or herbs.

Notes

Ensure uniform cuts for even cooking. Don't over-marinate halloumi. Preheat and oil the grill thoroughly to prevent sticking. Monitor cooking closely for best results.
