Ingredients
  

  • 6-8 ears of fresh corn on the cob, shucked
  • 1/2 cup unsalted butter, softened
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1 lime, juiced and zested
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

Method
 

  1. Preheat your grill to medium-high heat (about 400-450°F or 200-230°C).
  2. In a medium bowl, combine the softened butter, chili powder, smoked paprika, garlic powder, lime zest, salt, and black pepper. Mix until well combined and smooth, then stir in the chopped fresh cilantro.
  3. Shuck the corn, removing all the husks and silk. Optionally, brush the corn cobs with a neutral oil before grilling.
  4. Place the shucked corn directly on the preheated grill grates. Grill for 10-15 minutes, turning every 2-3 minutes, until the kernels are tender-crisp and have a char.
  5. Remove the corn from the grill and immediately slather each ear with the prepared chili butter.
  6. Squeeze fresh lime juice over the buttered corn and serve hot.

Notes

Ensure your butter is softened, not melted, for the best consistency. Fresh lime juice enhances the flavor significantly.
