  • 4-5 cloves Fresh Garlic (minced finely)
  • 1 tablespoon Fresh Rosemary (finely chopped, tough stems removed)
  • 1 tablespoon Fresh Thyme (finely chopped, stems removed)
  • 2 tablespoons Fresh Parsley (roughly chopped)
  • 1 teaspoon Kosher Salt (or to taste)
  • 1/2 teaspoon Black Pepper (freshly ground for best flavor)

Method
 

  1. Prepare the Potatoes: Wash and scrub the potatoes, cut into 1-inch pieces, and place in a large bowl.
  2. Make the Herb Mixture: Combine minced garlic, chopped rosemary, thyme, parsley, salt, and pepper in a small bowl.
  3. Season the Potatoes: Drizzle olive oil over the potatoes, add the herb mixture, and toss until evenly coated.
  4. Preheat the Grill: Preheat grill to medium-high heat (400-425°F), clean and lightly oil the grates.
  5. Grill the Potatoes: Spread seasoned potatoes in a single layer on the grill, grilling in batches if necessary.
  6. Cook to Perfection: Grill for 20-30 minutes, flipping every 5-7 minutes until golden brown and tender.
  7. Serve Immediately: Transfer to a serving platter, sprinkle with fresh parsley or flaky sea salt, and serve hot.

Notes
