Ingredients
  

  • 1 Cup Unsalted Butter, softened to room temperature
  • 3/4 Cup Granulated Sugar
  • 1/4 Cup Light Brown Sugar
  • 1 Large Egg, room temperature
  • 2 Teaspoons Vanilla Extract
  • 2 1/4 Cups All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Salt
  • 1/2 Cup Rainbow Sprinkles
  • 1 Quart Vanilla Ice Cream

Method
 

  1. Preheat your oven to 350 degrees Fahrenheit and line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract to the butter mixture and beat until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed.
  6. Gently fold in the rainbow sprinkles using a spatula.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheets, spacing them about two inches apart.
  8. Bake the cookies for 10 to 12 minutes or until the edges just start to turn golden.
  9. Allow the cookies to cool on the baking sheet for five minutes before transferring them to a wire rack.
  10. Once the cookies reach room temperature, place them in the freezer for thirty minutes.
  11. Take a scoop of softened ice cream and place it on the flat side of one cookie. Press another cookie on top gently.
  12. Roll the edges in extra sprinkles if desired.
  13. Wrap each Funfetti Ice Cream Sandwich in plastic wrap and freeze for at least four hours.

Notes

Ensure to use room temperature ingredients for the dough. Do not overbake the cookies to keep them soft. Store sandwiches tightly wrapped in plastic wrap to prevent freezer burn.
