- In a medium bowl, combine the chicken pieces with yogurt, ginger, garlic, garam masala, turmeric, chili powder, salt, and black pepper. Mix thoroughly and refrigerate for at least 20 minutes.
- Melt 1 tablespoon of butter and 1 tablespoon of oil in a large pot over medium-high heat. Add the marinated chicken in a single layer and sear for 3-4 minutes per side until lightly browned. Remove and set aside.
- Reduce heat to medium, add the remaining butter, and sauté the chopped onion until soft and translucent, about 5-7 minutes.
- Stir in the crushed tomatoes and water (or broth) and bring to a gentle simmer.
- Return the seared chicken to the pot, stir to combine, cover, and simmer for 15-20 minutes.
- Remove from heat, stir in the heavy cream, and adjust seasonings as needed.
- Ladle into bowls, garnish with cilantro, and serve immediately.
