Method
- Preheat your oven to 350°F. Grease a 9x13-inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, green chiles, corn, diced onion, garlic powder, cumin, and 1 cup of shredded cheddar cheese. Mix thoroughly and season with salt and pepper.
- Crush two-thirds of the Doritos and spread them evenly across the bottom of the prepared baking dish.
- Pour the chicken mixture over the crushed Doritos layer and spread it evenly.
- Sprinkle the remaining 1 cup of cheddar cheese over the top, then add the remaining crushed Doritos.
- Bake uncovered for 30-35 minutes until the cheese melts and the edges bubble. Let rest for 5 minutes before serving.
Notes
Use rotisserie chicken for convenience. Experiment with different varieties of Doritos for unique flavors. Store leftovers in an airtight container for up to 3-4 days.
