- Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan thoroughly or line it with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat butter and 1 cup of granulated sugar until light and fluffy, about three minutes.
- Beat in eggs one at a time, mixing well after each addition, then add vanilla extract.
- Alternate adding the flour mixture and milk to the butter mixture, beginning and ending with flour. Mix just until combined.
- In a small bowl, combine brown sugar, remaining granulated sugar, and cinnamon for the topping.
- Pour batter into the prepared pan and sprinkle the cinnamon-sugar mixture evenly over the top. Swirl gently with a knife.
- Bake for 35-40 minutes, until a toothpick inserted in the center comes out clean.
- Let cool in the pan for 15 minutes, then dust with powdered sugar if desired.
Notes
Use room temperature ingredients for best results. Don't overmix the batter to ensure a tender texture. Store covered at room temperature for up to three days or refrigerate for up to one week.
