Ingredients
  

  • 1 lb pasta (fettuccine, penne, or rigatoni)
  • 2 tbsp olive oil
  • 4-5 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and thinly sliced
  • 1 cup chicken broth (low sodium preferred)
  • 1 1/2 cups heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 5 oz fresh spinach (about 5-6 cups, packed, washed and stems removed)
  • Salt & black pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Method
 

  1. Cook the pasta according to package directions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sun-dried tomatoes, sauté for 2-3 minutes until fragrant.
  3. Pour in chicken broth, heavy cream, and red pepper flakes. Bring to a simmer, then stir in Parmesan cheese until melted. Season with salt and pepper.
  4. Add fresh spinach gradually, stirring until wilted.
  5. Combine cooked pasta with the sauce, tossing to coat. Add reserved pasta water as needed for consistency.
  6. Serve immediately, garnished with extra Parmesan cheese and parsley if desired.
