Ingredients
  

  • 2 medium English cucumbers, peeled and diced
  • 2 cups cherry or grape tomatoes, halved
  • 1/4 cup red onion, thinly sliced or finely diced
  • 2 tablespoons fresh dill, chopped (plus more for garnish)
  • 1/2 cup sour cream, full-fat
  • 1/4 cup mayonnaise, good quality
  • 1 tablespoon white vinegar
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Prepare the vegetables by washing and dicing the cucumbers, halving the tomatoes, and slicing the red onion.
  2. In a separate bowl, whisk together the sour cream, mayonnaise, vinegar, sugar, garlic powder, salt, and pepper until smooth.
  3. Combine the dressing with the prepared vegetables in a large mixing bowl and gently toss to coat.
  4. Chill the salad in the refrigerator for at least 30 minutes before serving.
  5. Garnish with additional dill before serving.

Notes

For a lighter version, substitute half of the sour cream with Greek yogurt. Store leftovers in an airtight container in the refrigerator for up to 2 days.
