Ingredients
  

  • 8 slices thick-cut brioche or challah
  • 8 ounces cream cheese (softened)
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup whole milk or half and half
  • 1 teaspoon ground cinnamo
  • 2-3 tablespoons unsalted butter
  • Maple syrup and fresh berries (as desired)

Method
 

  1. In a small bowl, combine softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread a generous layer of the cream cheese mixture onto one side of one slice of bread, then top with another slice to create a sandwich. Repeat until you have four sandwiches.
  3. In a shallow dish, whisk together eggs, milk, and ground cinnamon. Dip each sandwich into the custard for 20-30 seconds per side.
  4. Heat a large non-stick skillet over medium heat and melt butter. Cook the sandwiches for 3-4 minutes per side until golden brown. Serve immediately with toppings.

Notes

Use stale bread for better absorption of custard. Cook on medium-low heat for even cooking.
