Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon cotton candy flavor extract
  • Pink food coloring (as needed)
  • Blue food coloring (as needed)
  • 2 cups cotton candy (for garnish)
  • 4 cups powdered sugar (for frosting)
  • ¼ cup heavy cream (for frosting)

Method
 

  1. Preheat your oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. Whisk together flour, sugar, baking powder, and salt in a large bowl. Set aside.
  3. Beat softened butter until creamy, about 2 minutes with an electric mixer.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla and cotton candy extracts.
  5. Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with dry ingredients.
  6. Divide batter into three bowls. Leave one plain, color one pink, and one blue. Swirl colors together in prepared pans.
  7. Bake for 25-30 minutes until a toothpick comes out clean. Prepare frosting while cakes bake.
  8. Beat butter for frosting until smooth. Gradually add powdered sugar, then heavy cream and cotton candy extract. Color frosting to match cake.
  9. Cool cakes completely before frosting. Layer cakes with frosting between them.
  10. Frost the entire cake and top with cotton candy right before serving.

Notes

Ensure room temperature ingredients for better incorporation. Don't overmix the batter to keep the cake tender. Use gel food coloring for vibrant hues. Add cotton candy garnish immediately before serving to prevent dissolving.
