Ingredients
  

  • 8 oz dried ramen, soba, or spaghetti noodles
  • 1/4 cup tahini or creamy peanut butter
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 1 tsp grated ginger
  • 1 clove minced garlic
  • 1 tbsp honey or maple syrup
  • 1 tsp chili crisp or sriracha (optional)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup red bell pepper strips
  • Toasted sesame seeds
  • Sliced green onions
  • Fresh cilantro

Method
 

  1. Cook your chosen noodles according to the package directions. Use plenty of water to prevent sticking.
  2. Drain the noodles and immediately rinse them under cold running water to stop the cooking process.
  3. In a medium mixing bowl, whisk together the tahini, soy sauce, rice vinegar, sesame oil, honey, ginger, and garlic.
  4. Add a tablespoon of warm water if the sauce feels too thick to achieve a pourable consistency.
  5. Place the cold noodles into a large bowl. Pour the dressing over them and toss thoroughly to coat every strand.
  6. Fold in the shredded carrots, cucumbers, and bell peppers gently.
  7. Divide the mixture into individual serving cups or small glass jars.
  8. Top each cup with toasted sesame seeds, green onions, and cilantro.
  9. Chill the Cold Sesame Noodle Cups in the refrigerator for at least 30 minutes before serving.
  10. Serve cold and enjoy.

Notes

Ensure to rinse the noodles thoroughly to prevent sticking. These cups can be made ahead of time and taste better after sitting for a few hours.
