Ingredients
  

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Cream the softened butter and sugar together in a large bowl until light and fluffy.
  3. Add the egg yolk and vanilla extract, mixing until completely combined.
  4. Whisk the flour and salt together in a separate bowl, then gradually add to the butter mixture, stirring gently until just combined.
  5. Shape the dough into 1-inch balls or use a cookie press or cookie cutters.
  6. Place cookies on prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 12-15 minutes, until the edges just begin to turn golden.
  8. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

Ensure butter is at room temperature for proper creaming. Measure flour accurately to avoid dry cookies. Chill dough if it becomes too soft.
