  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • ¾ cup quick oats

Method
 

  1. Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
  5. Fold in 1 ½ cups of chocolate chips. Press about two-thirds of the dough evenly into your prepared pan.
  6. Mix the oats into the remaining dough. Crumble this mixture over the base layer and sprinkle the reserved chocolate chips on top.
  7. Bake for 28-32 minutes until the edges turn golden brown and the center looks set.
  8. Let the bars cool completely in the pan before slicing.
