Method
- Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing just until combined.
- Fold in 1 ½ cups of chocolate chips. Press about two-thirds of the dough evenly into your prepared pan.
- Mix the oats into the remaining dough. Crumble this mixture over the base layer and sprinkle the reserved chocolate chips on top.
- Bake for 28-32 minutes until the edges turn golden brown and the center looks set.
- Let the bars cool completely in the pan before slicing.
