Ingredients
  

  • 20 oz cheese tortellini (fresh or frozen)
  • 24 oz marinara sauce
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Fresh basil (optional)
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C) and prepare a 9x13-inch baking dish.
  2. In a medium bowl, mix ricotta cheese, Italian seasoning, garlic powder, salt, and pepper until smooth.
  3. Spread 1 cup of marinara sauce in the bottom of the baking dish, layer half the tortellini, dollop half the ricotta mixture, and sprinkle 1 cup of mozzarella. Repeat the layers.
  4. Pour remaining marinara over the top, then sprinkle remaining mozzarella and all the Parmesan cheese.
  5. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until bubbly and golden.
  6. Let rest for 5-10 minutes before serving, garnishing with fresh basil if desired.

Notes

This dish can be made ahead and stored in the refrigerator for up to 24 hours before baking. Leftovers can be refrigerated for up to 4 days or frozen for up to 3 months.
