- Prepare the peaches by washing, drying, and slicing them into wedges.
- Heat a large skillet over medium heat and melt the unsalted butter.
- Add the peach slices in a single layer and cook for 2-3 minutes until golden-brown.
- Sprinkle brown sugar and cinnamon over the peaches and gently flip them.
- Add vanilla extract and sea salt, stirring gently, and cook for another 2 minutes.
- Turn off the heat and let the peaches sit for one minute.
- Scoop vanilla bean ice cream into serving bowls and top with warm caramelized peaches and syrup.
- Optionally, add toasted pecans or fresh mint before serving.
