  • 6-8 oz fresh mozzarella cheese
  • 2 medium vine-ripe tomatoes
  • 1/2 cup fresh basil leaves, packed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp dried oregano
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)
  • Balsamic glaze (optional, for drizzling)

Method
 

  1. Prepare the Chicken: Pat the chicken breasts dry and butterfly them to create pockets.
  2. Season the Chicken: Combine olive oil, garlic powder, oregano, salt, and pepper. Rub this mixture on the chicken.
  3. Stuff the Chicken: Layer mozzarella, tomatoes, and basil inside each chicken pocket.
  4. Close and Secure: Fold the chicken over the stuffing and secure with toothpicks or kitchen twine.
  5. Sear the Chicken: Heat olive oil in a skillet and sear the chicken for 3-4 minutes on each side.
  6. Bake to Perfection: Transfer to a preheated oven at 375°F (190°C) and bake for 20-25 minutes.
  7. Rest and Serve: Let the chicken rest for 5-10 minutes before slicing and serving.
