Ingredients
  

  • 1 (13-16 oz) large bag of sturdy tortilla chips
  • 1 lb ground beef (or preferred protein)
  • 1 medium onion, chopped
  • 1 packet (1 oz) taco seasoning
  • 1 (15 oz) can canned black beans, rinsed and drained
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 1 cup your favorite salsa
  • 1/4 cup pickled jalapeƱo slices (optional)
  • 1/4 cup fresh cilantro, chopped
  • Sour cream for serving
  • Guacamole or avocado slices for serving

Method
 

  1. Prepare your protein: Brown the ground beef in a skillet, drain excess grease, add onion and cook until softened, then stir in taco seasoning and water.
  2. Rinse your beans: Thoroughly rinse and drain canned black beans.
  3. Layer the first round: Spread half of the tortilla chips in the skillet, top with half of the meat mixture, beans, salsa, and cheeses.
  4. Build the second layer: Repeat layering with remaining chips, meat, beans, salsa, and cheese. Add jalapeƱos if using.
  5. Melt the cheese: Cook over moderate heat until cheese is melted and chips are toasted, about 8-12 minutes.
  6. Garnish and serve: Sprinkle with cilantro and serve directly from the skillet with sour cream and guacamole on the side.

Notes

Choose sturdy chips to prevent sogginess. Pre-cook your meat for better flavor and texture. Layer ingredients evenly for the best results.
