Ingredients
  

  • 1 lb Breakfast Sausage or Chorizo
  • 2 lbs Yukon Gold Potatoes, diced into 1/2-inch cubes
  • 8 Large Eggs, whisked together
  • 1 Red Bell Pepper, diced small
  • 1/2 Yellow Onion, finely chopped
  • 1 can (15 oz) Black Beans, rinsed and drained
  • 1.5 cups Shredded Cheddar Cheese or a Mexican blend
  • 2 tbsp Olive Oil for frying potatoes
  • 1 tsp Cumi
  • 1 tsp Chili Powder
  • Salt and Pepper to taste
  • 1/4 cup Fresh Cilantro, chopped for garnish

Method
 

  1. Place a large cast-iron or non-stick skillet over medium-high heat. Add the ground sausage or chorizo and brown thoroughly.
  2. Remove the cooked meat with a slotted spoon, leaving the rendered fat in the skillet.
  3. Add olive oil if necessary, then toss in the diced potatoes and cook undisturbed for about five minutes.
  4. Stir the potatoes and continue cooking until tender and crispy, about 10 to 12 minutes.
  5. Add diced onions and bell peppers, sauté until softened, then stir in the cooked sausage.
  6. Add black beans, cumin, and chili powder, mixing everything together.
  7. Reduce heat to medium-low, pour whisked eggs over the mixture, and gently stir until eggs are set but moist.
  8. Sprinkle shredded cheese on top, cover with a lid for 1-2 minutes until melted, then garnish with fresh cilantro before serving.

Notes

Ensure potatoes are diced uniformly for even cooking. Use a well-seasoned cast-iron skillet for best results.
