- Place a large cast-iron or non-stick skillet over medium-high heat. Add the ground sausage or chorizo and brown thoroughly.
- Remove the cooked meat with a slotted spoon, leaving the rendered fat in the skillet.
- Add olive oil if necessary, then toss in the diced potatoes and cook undisturbed for about five minutes.
- Stir the potatoes and continue cooking until tender and crispy, about 10 to 12 minutes.
- Add diced onions and bell peppers, sauté until softened, then stir in the cooked sausage.
- Add black beans, cumin, and chili powder, mixing everything together.
- Reduce heat to medium-low, pour whisked eggs over the mixture, and gently stir until eggs are set but moist.
- Sprinkle shredded cheese on top, cover with a lid for 1-2 minutes until melted, then garnish with fresh cilantro before serving.
Notes
