Method

- Add vanilla extract to the warmed mixture and stir until smooth.
- Pour the wet ingredients over the dry ingredients and mix thoroughly until sticky but manageable.
- Let the mixture sit for 5 minutes to absorb moisture.
- Roll the mixture into 1-inch balls, yielding about 20-24 bites.
- Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
Notes
Use old-fashioned rolled oats for better texture. For nut-free, substitute almond butter with sunflower seed butter. For vegan, replace honey with maple syrup. Store in an airtight container in the refrigerator for up to two weeks or freeze for up to three months.
